Grammy's Blueberry Pie

Ingredients

  • ¾ c sugar
  • 2 ½ tbsp cornstarch
  • ¼ tsp salt
  • 2 c cool whip or 1 c whipping cream
  • 2/3 c water
  • 1 c frozen or fresh blueberries
  • 2 c frozen or fresh blueberries
  • 1 c whipping cream
  • 2 tbsp 10x sugar
  • ½ tsp vanilla
  • 2 tbsp butter
  • 1 ½ tbsp lemon juice

Method

Combine: sugar, cornstarch and salt in pan. Blend in: water and 1 c blueberries and bring to a boil. Cook stirring constantly till very thick. Stir in: Butter and lemon juice. Cool. Fold in: 2 c blueberries. Chill 1 hour. Beat 1 c whipped cream till thick; add 2 tbsp 10x sugar and ½ tsp vanilla. Spread half wh. cream over bottom of pie shell. Top with blueberry filling. Chill 1-2 hours. Garnish with remaining whipped cream.

1 c whipping cream = 2 c cool whip

Put blueberry glop in fridge overnight
