Irish Potatoes
Ingredients
- ½ lb butter
- 1 8oz pkg. cream cheese
- 1 8oz. pkg. coconut
- 1 1/3 tsp. vanilla
- 2 1-lb boxes confectionary (powdered) sugar (1kg minus 1/5 cup),
- Cinnamon
Method

Cream butter + cream cheese well.

Add 1 1/3 tsp. vanilla.

Fold in coconut.

Knead in sugar ½ cup at a time.

Refrigerate several hours or overnight.

Shape into small balls

Dust lightly with cinnamon
