Irish Potatoes

Ingredients

  • ½ lb butter
  • 1 8oz pkg. cream cheese
  • 1 8oz. pkg. coconut
  • 1 1/3 tsp. vanilla
  • 2 1-lb boxes confectionary (powdered) sugar (1kg minus 1/5 cup),
  • Cinnamon

Method

  1. Cream butter + cream cheese well.

  2. Add 1 1/3 tsp. vanilla.

  3. Fold in coconut.

  4. Knead in sugar ½ cup at a time.

  5. Refrigerate several hours or overnight.

  6. Shape into small balls

  7. Dust lightly with cinnamon
