Joel Romansky's Penne a la Vodka

Ingredients

  • ½ lb penne
  • 4 Tbs olive oil
  • 13 cloves garlic, minced
  • ¼ cup vodka
  • 1 ½ whole milk ( or half n half or heavy cream)
  • ½ cup tomato sauce
  • Salt and pepper
  • Fresh Romano (or Parmesan) cheese, grated
  • 1/3 small stick of butter

Method

½ lb penne

4 Tbs olive oil

13 cloves garlic, minced

¼ cup vodka

1 ½ whole milk ( or half n half or heavy cream)

½ cup tomato sauce

Salt and pepper

Fresh Romano (or Parmesan) cheese, grated

1/3 small stick of butter

Cook penne according to directions on package. Drain and set aside.

Boil milk until reduced in volume by half.

In a large skillet heat olive oil.

Add garlic and cook for 30 seconds.

Add vodka and cook until the flames dissipate.

Add tomato sauce and season with salt and pepper heavily.

Add vodka and sauce mixture to milk.

Add butter. When all is hot remove.

Pour enough sauce to cover the bottom of the serving bowl/ dish.

Add cooked pasta and stir until coated and heated through.

Serve with grated cheese.
